You have a recipe, a brand and a launch date — and now you have to decide who actually fills the can. Whether you are a founder launching a drinks brand or a venue building a house product, the shortlist of beverage canning companies Ontario operators work with splits into two very different models: mobile canning crews who bring a line to your liquid, and fixed-line co-packers who bring your liquid to their plant. That single choice drives your cost per case, your shelf life, and how much control you keep over what ends up in the can.

Mobile canning versus a fixed canning line Ontario

Mobile canning

Mobile canning Canada providers arrive with a skid-mounted filler and seamer and run your batch on site, usually at a licensed facility you have already secured. It is the lower-commitment path: smaller batches, faster recipe iteration, and you keep the liquid in your own hands. The trade-off is that you supply the space, the tank, the utilities, the ingredients and often the quality checks. Ambient conditions are less controlled than a plant, and you are limited to the formats and closures that particular skid supports.

Fixed-line co-packers

A dedicated canning line Ontario plant is built for repeatability: clean-in-place systems, filtered air, in-line fill-height and dissolved-oxygen monitoring, on-site lab support, date coding, palletizing and often warehousing. You pay for that in minimum run sizes and scheduling lead time, and you hand over part of the make. If your product is going into chain accounts or provincial retail, that repeatability is usually the thing you are actually buying.

Can formats and seam integrity

Ask which formats are running on the line today, not which formats could be tooled. Sleek 355mL, standard 355mL and 473mL cans use different tooling, different ends and different trays, and a changeover you assumed was free may not be. Decide early between printed cans and shrink sleeves, because printed cans carry their own separate minimums from the can supplier.

The double seam is the only thing standing between your liquid and the outside world, so treat it as the core technical question of the tour. Ask to see logged seam teardowns — seam thickness and width, countersink depth, body hook, cover hook, overlap and tightness rating — how often they are pulled, who signs them off, and what happens to product filled between two checks if one fails. Still drinks deserve extra attention here: with no carbonation there is no CO2 headspace pressure holding the can rigid, so ask how the line handles that and how it controls dissolved oxygen at fill.

Why water source and a controlled water spec change the drink

Water is most of the beverage, and municipal supply in Ontario varies through the year in alkalinity, hardness and chlorine or chloramine levels. If nobody is measuring it, your flavour will drift between runs and you will blame the flavour house. Ask for the treatment train in writing — carbon filtration, reverse osmosis, remineralisation, UV — plus the target spec the plant holds to for pH, TDS, hardness and residual chlorine, and how often it is verified.

Our vodka water cocktails are built on premium distilled vodka and alkaline water at pH 8.5 or higher, with no carbonation, no added sugar, no artificial sweeteners and no preservatives — the still, no-bubbles format is the whole point, and it only tastes the same in March and September because the water is specified rather than assumed. What a minimum run actually commits you to

A minimum run is rarely just a filling fee. It typically commits you to a can and end order, sleeves or printed plates, trays and film, ingredient purchases that may be prepaid and non-refundable, plus storage for whatever you cannot sell in the first quarter. Get every one of those lines quoted separately before you sign, and ask what happens to your deposit if a batch fails QA. Due-diligence checklist for touring a facility

  • Licences and registrations: current provincial alcohol manufacturing authorisation, CFIA/food safety registration, and any third-party audit certification.
  • Water: source, treatment train, target spec, and the frequency of verification testing.
  • Seam control: teardown records, measurement frequency, sign-off authority, and the hold procedure when a seam fails.
  • Formats: can sizes and end types running now, changeover cost, and printed-can versus sleeve minimums.
  • Quality and traceability: batch coding, retain samples, shelf-life and stability testing, recall procedure and mock-recall records.
  • Commercials in writing: minimum run, lead time, loss and yield allowance, storage terms, and who owns the recipe and any spare inventory.
  • Logistics: pallet configuration, warehousing, and who is responsible for delivery into your provincial channel.

Licensing and provincial rules

Alcohol production and distribution in Canada is provincially regulated, and a valid liquor licence is required for licensee purchasing. Rules and channels differ by province and change over time, so confirm current requirements directly with your provincial authority: AGCO and the LCBO in Ontario, AGLC in Alberta, and the BC Liquor Distribution Branch in British Columbia.
