Why carbonation is the problem
The bubbles in a seltzer are dissolved carbon dioxide held under pressure. Once the can is open and the liquid warms in your stomach, that gas comes back out of solution — and it has to go somewhere. For a lot of drinkers that shows up as bloating, pressure and discomfort an hour later. Removing the carbonation removes the cause.

Carbonation is also an aggressive flavour tool: it scrubs the palate and hides a rough spirit.
